It’s so fun to celebrate St. Patrick’s Day with kids! My daughter and I love decorating and setting a leprechaun trap, made out of things we have around the house. That smart leprechaun always gets away, but usually leaves a mess of green glitter, footprints, and a prize or two!
Every year we search out a fun new dessert to try and make. This year it’s a yummy green Jello poke cake! It’s such a moist cake.

It’s so easy to make this yummy Jello poke cake! Kids will especially love to be put in charge of poking the holes (chopsticks work nicely for this)!

JELLO POKE CAKE RECIPE:

- Cook Time: 25 minutes plus chilling time
Ingredients To Make This Delicious Jello Poke Cake Recipe
- 1 box white cake mix
- 4 large egg whites, room temperature
- 1 cup buttermilk
- ½ cup vegetable or canola oil
- 1 small box (3.4 oz) lime gelatin (any flavor will work)
- 1/2 cup cold water
- 1 cup boiling water

How To Make This Yummy Jello Poke Cake Recipe
Step 1
Preheat oven to 350 degrees and coat a 13×9 baking dish with non-stick cooking spray.
Step 2
Combine cake mix, eggs, water, buttermilk, and oil until smooth.
Step 3
Spread evenly into baking dish, bake for about 25 minutes or until a toothpick inserted in the center comes out clean.
Step 4
Remove from oven and let cool for 15 minutes.
Step 5
Combine gelatin and boiling water and stir about 2 minutes until dissolved, add cold water.
Step 6
Using a wooden skewer or large fork, poke holes into cake about every 1/2 inch. I honestly just used the handle of a wooden spoon, but anything will work as long as you can poke wholes for your jello cake.
Step 7
Carefully pour your jello mixture over the cake.
Step 8
Place in refrigerator at least 3 hours or overnight.
How To Make Frosting For Your Jell-O Poke Cake
Step 9
In a mixing bowl, combine Cool Whip with pudding mix until completely smooth.
Step 10
Spread over the top of the cake.
Step 11
Store in refrigerator until ready to serve.
Step 12
Store leftovers in refrigerator covered with plastic wrap.

Serve with sprinkles or fresh limes.
Notes:
This is one of my favorite poke cake recipes, but if you want to add a little freshness you can always put fresh strawberries or kiwi on top, or whatever fruit or fresh berries you like.
You can also change the cake using any of your favorite flavor of jello.
Plan on eating it right away? Then you can always use homemade whipped cream on top. It’ll make a rich frosting for the top of your cake.
HOW TO MAKE A GLUTEN FREE JELLO POKE CAKE
Super easy! Just grab a gluten free vanilla cake mix, and gluten free lime gelatin (like Simple Mixes lime gelatin mix, on Amazon!). Double check that all of our other processed ingredients are gluten free, and then you’re good to go! Even gluten free this is a delicious cake and is such an easy dessert recipe.

We love this lime Jello poke cake, especially around St. Patrick’s day. But you can make this any time of year using your favorite Jello flavors. My husband loves a good strawberry Jello cake. Something about a strawberry Jello poke cake just screams summer to me. But you could use cherry jello, raspberry, whatever flavor.
Or you can use blue and red Jello to make a 4th of July poke cake. You could even try to make it look like the American flag if you’re talented enough. I am not. The options are endless when it comes to this poke cake recipe.

Can I Use Another Cake Mix Like Yellow Cake Mix Instead Of A White Cake Mix For My Jello Poke Cake?
Yes, you can use a yellow cake mix, though the color isn’t going to be as vibrant as it would be against a white cake. While other cake mixes would show the color, I would stick to plain flavored boxed cake mix and avoid flavors like lemon cake or a chocolate cake mix as the flavors/colors would clash.
Do I have To Use Vegetable Oil In My Cake? Can I Use Butter Instead?
Yes! You can. Butter will give your cake a lot more flavor. You can replace the amount of oil using the amount of butter. Though some people suggest adding a tablespoon more just because butter does contain water.
How Do I Store My Leftover Poke Cake?
You can store your leftover cake in an airtight container in the fridge. It should last about 5 days in the fridge. Though if you made homemade whipped topping it may last less time as it’ll start to deflate and possibly make your cake soggy.
