This Applesauce Cookie Recipe

Ingredients – Applesauce Cookies
- 1 cup granulated sugar
- ½ cup (1 stick) unsalted butter, softened
- 1 large egg, room temperature
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 cup unsweetened applesauce
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 2 cups old-fashioned oats
- 1 cup raisins, optional
- 1 cup nuts, walnuts or pecans chopped, optional
INSTRUCTIONS – APPLESAUCE COOKIES
Step 1
First, preheat oven to 350 degrees F.
Step 2
Then, line baking sheets with a silicone mat or parchment paper.
Step 3
In a large bowl, cream together the butter and sugar.
Step 4
Next, mix in egg, vanilla extract, and applesauce.
Step 5
In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
Step 6
Then, in a small bowl, add raisins and a spoonful of flour mixture. This will keep the raisins from clumping together in the cookies.
Step 7
Gradually add flour mixture to wet ingredients, mixing well.
Step 8
Next, fold in oats, raisins, and pecans.
Step 9
Divide batter using a cookie dough scoop, roll into ball and place on cookie sheet 2 inches apart.
Step 10
Bake for 9-11 minutes or until lightly golden and slightly set. Bake longer for a crispy cookie.

Remove from oven and cool on wire rack.

Recipe Notes:
Let your applesauce oatmeal cookies cool off before taking them the cookie sheet because then they won’t fall apart.
Don’t like butter? Then substitute the butter in these homemade applesauce cookies for something like coconut oil.
You can use a cup applesauce that is sweetened, but your sweet treats will be extra sweet. Less sugar options are generally healthier.
Don’t like raisins? You can turn them into applesauce chocolate chip cookies. Though I would stick with dark chocolate chips as they go better with the “warming” spices.
HOW TO STORE APPLESAUCE COOKIES
As soon as your cookies have cooled to room temperature, store them in an airtight container.
I prefer to store cookies in the fridge, but you can also freeze them!

To make gluten free applesauce cookies, replace the all-purpose flour and the oats in the recipe above, with gluten free all-purpose flour, and gluten free oats.
